Jenn’s Home Made Oatmeal Bars

They taste great with many variations of fruit, yogurt, and nut combinations, so get creative!
• 3 cups – Instant oatmeal (I always have packets of maple & brown sugar or fruit flavors around the house)
• 2 tsp. – Baking powder
• 1 tsp. – Salt
• ½ tsp. – Cinnamon
• ¼ tsp. – Nutmeg
• 6 oz. – Yogurt (I use the individual serving cups of yogurt I always keep around, fruit or plain flavored)
• 3 eggs
• 1 tsp.  – Vanilla
• 1 cup – Milk (I use unsweetened almond milk)
• 4 oz. – Maple syrup
• 2 cups – Fresh fruit, chopped (I like to use bananas, blueberries, and raspberries)
• 1 cup – Nuts, chopped
• Optional ½ cup – Sugar (If you like a sweeter breakfast bar, or if you use plain oatmeal or yogurt instead of fruit flavored)Preheat oven to 375˚F.  Combine dry ingredients in a bowl.  In a separate bowl, combine liquid ingredients (including chopped fruit).  Mix the dry and liquid ingredients together just before pouring into a greased and floured baking dish.home made oatmeal bars baked  Bake for about 1 hour or until edges are golden brown and a knife comes out clean from the center.  Allow to cool and cut into squares of desired size. Enjoy immediately or freeze and save for hiking and camping trips!  *I live at an elevation of 5,000 ft.  You may need to adjust cooking temperature and time for different elevations.
